I am admittedly late to the overnight oats game and you can find countless variations on Pinterest, but these Vegan Strawberry Cheesecake Overnight Oats have my name written all over it!
Now that vegan cream cheese and vegan yogurts are so readily available, you can create countless delicious options such as this one.
The best part of a recipe like overnight oats, is that everything gets stirred into one jar. Lid goes on, into the fridge overnight and just like that…you have a delicious and healthy morning snack. Here’s what you’ll need to make my Vegan Strawberry Cheesecake Overnight Oats:
- Old Fashioned Oats
- Almond Milk
- Strawberry Flavored Vegan Yogurt Alternative
- Vanilla Extract
- Vegan Cream Cheese
- Sugar and
- A Crushed Graham Cracker
How to make Vegan Strawberry Cheesecake Overnight Oats
Everything but half the strawberries and the graham cracker crumbs get mixed together in the jar. Give it a stir, put the lid on and refrigerate overnight.
You can find these little canning jars online or in grocery stores, even Target or Walmart. This is the BALL brand with a separately purchased coordinating white screw on lid.
And this is what it looks like the next morning. Most of the liquid has been absorbed and the oats are nice and tender. But we’re not done just yet!
Keeping with that cheesecake theme, I crushed up one graham cracker and use it as our topping. Add a few more strawberries and you are good to go.

Because we put strawberries in the oats and on top, nearly every bite contains fruit. That vegan cream cheese with just a bit of sugar gives a certain richness to the recipe, along with the strawberry yogurt and almond milk.

Vegan Strawberry Cheesecake Overnight Oats
- Glass jar with lid
- 3/4 c Old Fashioned Oats
- 1/2 c Almond Milk
- 3 oz Strawberry Flavored Vegan Yogurt Alternative
- 3-4 Strawberries some diced for the yogurt, reserve some for serving
- 1/2 tsp Pure Vanilla Extract
- 1 tbsp Vegan Cream Cheese softened
- 1 1/2 tsp Sugar
- 1 Graham Cracker crushed
- Combine all ingredients EXCEPT graham crackers and a strawberry or two in a glass jar. Secure the lid and refrigerate for at least two hours, but overnight for the best texture.
- The next morning, add the crushed graham cracker and fresh strawberries.
- Mix and enjoy!
