By now, you might have seen my recipe for Original Orange “Chicken” by Panda Express {Vegan Version}. I created the companion recipe for Better Than Panda Express Fried Rice because, well – you can have one without the other, right? 😉

Let’s saute some veggies…

It all begins with sauteeing onions, carrots and peas in a small amount of oil. You could also opt to water-saute these, but be sure you have a good non-stick pan for that!

Use pre-made, cold rice…

For fried rice, I like to prepare the rice the night before and refrigerate it. This does a few things. First, it’s already cooked, but it also helps keep the rice separate and makes the perfect stir fry. I saute it for a few minutes.

Season it up…

One of the secrets to the Panda Express version, is the addition of butter. I am of course, using vegan margarine.

Next comes the low-sodium soy sauce, salt, pepper and sesame oil. You can also choose to add the sesame oil at the very end. I didn’t find much difference with either method, but there are some schools of thought that the flavor is more enhanced adding it once the rice is completely fried. I’ll leave you to decide which option you prefer.

Looking good, right? I like some crusty edges on my fried rice and what that means, is leaving it alone a few times and not stirring constantly. I know, it’s counter-intuitive – but it works!

Add a vegan egg…

Knowing I was going to make this recipe, I reached out to Follow Your Heart to see if I could get some samples of their Vegan Egg to test out. They were kind enough to send me a variety of products including the Vegan Egg and I could not WAIT to give them a try!

I found that if you cook them a bit slower than the recommendation, you get these perfect, ready to add to your fried rice, scrambled egg alternative! I used my Nutribullet to get a fluffier end product and it worked amazingly well.

Add them at the very end of your cooking.

I had leftover rice and orange sauce from the previous recipe. Needless to say, I devoured this bowl! So good. Garnish with a few scallions and a sprig of fresh parsley.

Better Than Panda Express Fried Rice

Ingredients

  • 2 c Any long grain White Rice cooked and refrigerated
  • 2 Vegan Eggs
  • 1 tbsp Vegan Margarine
  • 1 c Peas and Carrots defrosted
  • 1/4 Onion diced
  • 1-2 tbsp Soy Sauce
  • 1/4 tsp Sesame Oil or more to taste
  • pinch Pepper
  • 1/8 tsp Salt or more to taste
  • 1 green onion diced

Instructions

  • The night before you plan to make this recipe, I highly recommend cooking your rice and refrigerating it. It seems to fry up much better this way.
  • In a large saute pan, add a bit of oil along with diced onions and defrosted frozen peas and carrots. 
  • Meanwhile, in another pan, scramble your Vegan Eggs in skillet. Using a blender or Nutribullet creates a fluffier end product. Stir as little as possible, taking care that the pan is not too hot or it will stick. Oil is necessary to prevent this.
  • Add the rice to the veggies along with a tbsp of vegan margarine. Stir fry for a minute or two. 
  • Add the soy sauce, sesame oil, salt and pepper. Stir fry until desired texture is reached. To get those somewhat browned, crispier edges, try to allow some time in between stirring.
  • Add in the Vegan Egg along with a drizzle of sesame oil to finish (if desired).
  • Garnish with scallions and a sprig of fresh parsley. Serve with my Vegan Orange Chicken recipe!
