Easy Roasted Butternut Squash Recipe

- 1 medium Butternut Squash ends trimmed, peeled, seeds removed and cut into cubes
- 1 medium Red Onion peeled and cut into chunks
- 2 tbsp Vegetable Oil or more as needed to fully coat the veggies
- 1/4 c Brown Sugar I prefer light brown sugar for this particular recipe
- 1/2 tsp Salt
- 1/4 tsp Pepper
Preheat oven to 400 degrees.
Prepare squash and onion, adding them to a medium bowl.
Add oil, salt, pepper and brown sugar. Toss well.
Add the veggies to a sheet pan in one even layer.
Roast until tender, about 40 minutes or until for tender.
