  • 1 sheet Puff Pastry thawed according to package instructions
  • 1 large Red Apple anything suitable for baking
  • 1 tsp Ground Cinnamon
  • 2 tsp Sugar
  • 4 tsp Apricot or Strawberry Jelly/Jam warmed to make spreading easier
  • Almond Milk or Melted Vegan Margarine for brushing


  • Thaw puff pastry according to package instructions.
  • Preheat oven to 350 degrees.
  • Line a baking sheet with a silpat or parchment.
  • Cut a puff pastry sheet into four equal portions.
  • Add the warmed jelly/jam and spread almost to the edges.
  • Add half of the cinnamon sugar and top with apple slices. Repeat with reserved cinnamon sugar.
  • Bake for 8-10 minutes and then brush with either almond milk or melted vegan margarine. Return to bake for another 8-10 minutes or until golden.
  • Allow to cool slightly and add a scoop of your favorite vegan vanilla ice cream.
