Warm Potato Salad with Dijon Vinaigrette

- 2 lbs Baby Red Potatoes boiled, cooled and halved
- 2 tbsp Red Wine Vinegar
- 1 1/2 tsp Dijon Mustard you can also use whole grain mustard
- 1/4 c Olive Oil
- 3 Scallions chopped
- 1/4 c Parsley chopped
- 1 1/2 tsp Dill
- Salt & Pepper to taste
Scrub potatoes and place into a pot of boiling water. Cook until tender. Drain on paper towels and cool slightly.
In a large bowl, combine the red wine vinegar and Dijon. Drizzle in the olive oil while whisking constantly. The mustard will emulsify the dressing.
Add the slightly cooled potatoes that you have halved along with the remaining herbs and seasonings. Toss gently to coat.
Serve warm or cold.
