Warm Potato Salad with Dijon Vinaigrette

  • 2 lbs Baby Red Potatoes boiled, cooled and halved
  • 2 tbsp Red Wine Vinegar
  • 1 1/2 tsp Dijon Mustard you can also use whole grain mustard
  • 1/4 c Olive Oil
  • 3 Scallions chopped
  • 1/4 c Parsley chopped
  • 1 1/2 tsp Dill
  • Salt & Pepper to taste


  • Scrub potatoes and place into a pot of boiling water. Cook until tender. Drain on paper towels and cool slightly.
  • In a large bowl, combine the red wine vinegar and Dijon. Drizzle in the olive oil while whisking constantly. The mustard will emulsify the dressing.
  • Add the slightly cooled potatoes that you have halved along with the remaining herbs and seasonings. Toss gently to coat.
  • Serve warm or cold.
